The Important Stuff
* Our oven, kitchen and servery are housed in a 6m hexagonal marquee.
We have a 4.5 x 3m marquee for day events.
* We hold all current relevant documents concerning insurances,
environmental health, risk assessment, pat and corgi testing.
* We require a flat level site for our oven, electricity supply and access
to water. Also, reasonably good access to the site.
* Green Stuff:
We burn wood, a sustainable fuel.
We use recyclable paper plates.
Our washing up liquid is made by Bio D.
Rather than just recycling we try to avoid consuming more than we need
and look carefully at packaging with a view to reusing rather than
just putting in the right colour bin.
* The ingredients for our dough, tomato sauce and most of our cheese
are from certified organic sources. We use homegrown vegetables and
herbs when we can. l
